Cherry Tomato and Fava Bean Pasta

serves 4

You will need

Cherry tomato fava bean sauce

300 g pasta, e.g. "bucatini" pasta

1 onion

1 garlic clove

1 tablespoon oil

1 can (400/240 g) canned cherry tomatoes

1 dl water

2 tablespoons tomato puree

1 tablespoon soft brown sugar

pinch of salt and crushed black pepper

pinch of crushed chilli

1 1/2 dl Fava Mill Ground Fava Beans

In addition

1-2 dl pecorino shavings

fresh basil



Cook the pasta in salted water, according to packet instructions. Peel and chop the onion and garlic clove and sauté until softened. Add cherry tomatoes and rinse the can with water. Add the water, tomato puree and spices to the frying pan. Allow the sauce to simmer for 10 minutes or until thickened. Drain the pasta, setting aside 50ml of the cooking water. Add the cooked pasta and the cooking water into the sauce and stir together all ingredients. Serve with pecorino shavings and chopped basil.
